Recipe: Low Fat/Gluten Free Peanut Noodles

I don't always eat Chinese food... but when I do, I usually stuff my face with fatty peanut noodles! But not anymore - with the inspiration of Ellie Kreiger's Aromatic Noodles I can have my noodles and eat them too. With some slight variations like making this gluten free and lower in fat, I found a major winner. This was so delicious, and since I made this with vegetable noodles instead of real pasta, you can get away with eating a bit more. Don't mind if I do!

Pretty Zesty Peanut Noodles


What you'll need to serve 2:

For the pasta/veggies:
3 medium zucchini's, spiralized into noodles
1 package (about 2 cups) snow peas

For the sauce:
1/2 cup PB2 (powdered peanut butter - this is a must to have a lower fat sauce)
1/4 cup low sodium Tamari sauce (soy sauce has gluten in it)
2 tbs rice vinegar
juice of 1-2 limes (2 tbs so this will dep on how juicy your limes are)
3/4 grated fresh ginger
sprinkle red pepper flakes
(I did not add the water or sugar from her recipe - I thought the sauce tasted great like this)

For the toppings:
sliced scallions
PB2 to sprinkle on top (just a tsp or so)
1-2 tsp sesame seeds per serving

What you'll do:

Spiralize the 3 zucchini's. I really like this spiralizer, but you can also use a julienne peeler.
Mix these in a large bowl with the snow peas.

In a separate mixing bowl, add in all of the sauce ingredients and whisk. Then pour the sauce over the vegetables and toss.

Serve into large bowls. Top each bowl with the scallions, PB2, and sesame seeds. Note: I did not add the PB2 to the top in the pictured dish. I realized it would be a good idea in my second helping. haha.

Firmoo Prescription Glasses Review

Recently, I was lucky enough to test out Firmoo.com and order a pair of lovely new prescription reading glasses. This site is a great way to order new glasses when you have your prescription handy. You can easily get your eye test done at a local shop, then after you virtually try on glasses on the website that you like, plug in the prescription, order the glasses... that's it! So simple and easy. You can upload a photo of yourself to see how the glasses look too.

And here they are in person. I really like them. They are larger than I usually wear but I think they are super fun and I'm glad they are different to my usual style. The prescription is also great! When it comes to reading, they are better than my other pair of glasses which I got at a shop (at a much more expensive price). They are the same prescription so I have no idea why this is but I see better in them.


They also came with a hard and soft case, and a scratch cloth. I think Firmoo.com is a fantastic way to order glasses and you can always return them if you are not satisfied, and the prices are competitive and the styles are as well. I think anyone could find something they'd like.
