Creamy Red Beans and Rice

Inspired by our trip to New Orleans, I give you this Creamy Red Beans and Rice Recipe!

 What you'll need:

2 tbs coconut oil
1 medium yellow onion, diced
5 garlic cloves, minced (use more or less depending on your sensitivity to vampire attacks 🦇)

2 tbs #Cajun seasoning

2 tbs #Creole seasoning

1 16oz can diced tomatoes
1 16oz can kidney beans, rinsed
3-4 cups cooked white basmati rice 
1 can coconut milk (JUST the cream, no water)
2 tbs tomato paste
Sea Salt to taste

Heat coconut oil in large pot. Add diced onion and sauté until soft. Add the garlic, Cajun and Creole spices. Stir to combine. Let heat for about 2 minutes. Add the can of tomatoes and rinsed beans. Bring to simmer. After about 5 minutes, add the cooked rice and heat through (my rice was cold, I made it ahead of time for meal prep). Once everything is hot, add the coconut cream and tomato paste. Stir and bring to a low simmer. Turn off heat. Serve with fresh parsley and vegan sour cream if desired. 

Rice Noodle Sauté

🍜 Real Simple Rice Noodle Sauté 

Cook 1 box rice noodles according to package. Once cooked drain and set aside.
In same pot sauté the following:
2 tbs sesame oil
1/2 cup tamari 
2 tbs peanut butter
2 tbs Thai seasoning
1/4 cup rice vinegar
1/2 red onion, sliced
3 garlic cloves, minced
1 in nub garlic, minced
1 pint mushrooms, slices
2 stalks bok choy, sliced
1 red pepper, sliced

Cook until veggies are a little soft but still have crunch. Mix in cooked noodles. Adjust any flavors. Serve with toppings of choice: cilantro, basil, lime wedges, scallion, sesame seeds, Sriracha, etc

Vegan Summer Salads

Smoked Macaroni Salad
(mix all in a bowl)
4-5 cups cooked macaroni

2 small blocks precooked diced smoked tofu
1/2 cup Follow your Heart sour cream
1/4 cup Kite Hill Foods cream cheese
1/2 small white onion
Handful chopped basil
1 tbs minced parsley
2 scallions, sliced
1 tsp paprika
1 tbs garlic powder
1/2 lemon, juice and zest
Salt and pepper to taste

Zesty Tofu Salad
(mix all in a bowl)
1 block extra firm tofu, drained and crumbled
1/2 cup Follow Your Heart sour cream
1/4 cup Kite Hill Foods cream cheese
1/2 small chopped white (or red) onion
2 scallions, sliced thin
3 stalks celery, minced or diced
1 tbs minced parsley
1 lemon, juice and zest
Salt and pepper to taste
