Creamy Red Beans and Rice

Inspired by our trip to New Orleans, I give you this Creamy Red Beans and Rice Recipe!



 What you'll need:

2 tbs coconut oil
1 medium yellow onion, diced
5 garlic cloves, minced (use more or less depending on your sensitivity to vampire attacks ðŸ¦‡)

2 tbs #Cajun seasoning

2 tbs #Creole seasoning

1 16oz can diced tomatoes
1 16oz can kidney beans, rinsed
3-4 cups cooked white basmati rice 
1 can coconut milk (JUST the cream, no water)
2 tbs tomato paste
Sea Salt to taste

Heat coconut oil in large pot. Add diced onion and sauté until soft. Add the garlic, Cajun and Creole spices. Stir to combine. Let heat for about 2 minutes. Add the can of tomatoes and rinsed beans. Bring to simmer. After about 5 minutes, add the cooked rice and heat through (my rice was cold, I made it ahead of time for meal prep). Once everything is hot, add the coconut cream and tomato paste. Stir and bring to a low simmer. Turn off heat. Serve with fresh parsley and vegan sour cream if desired.
