Rice Noodle Sauté

Real Simple Rice Noodle Sauté


Cook 1 box rice noodles according to package. Once cooked drain and set aside.
In same pot sauté the following:

2 tbs sesame oil
1/2 cup tamari 
2 tbs peanut butter
2 tbs Thai seasoning
1/4 cup rice vinegar
1/2 red onion, sliced
3 garlic cloves, minced
1 in nub garlic, minced
1 pint mushrooms, slices
2 stalks bok choy, sliced
1 red pepper, sliced


Cook until veggies are a little soft but still have crunch. Mix in cooked noodles. Adjust any flavors. Serve with toppings of choice: cilantro, basil, lime wedges, scallion, sesame seeds, Sriracha, etc
